In the heart of the Chianti region, CAREL has supported Merenti Refrigerazione in developing a technological solution for Antica Macelleria Cecchini, designed to preserve the quality of the meat through precise control of temperature and humidity. The project successfully combines respect for traditional craftsmanship with the efficiency and reliability of advanced control systems.
The initiative stems from Dario Cecchini’s desire to ensure a slow, natural curing process that prevents surface drying and maintains the meat’s full organoleptic properties. This goal has been achieved thanks to CAREL’s Ultracella technology, which allows combined management of temperature and humidity parameters by modulating CAREL’s electronic ExV valves for precise control of dehumidification. In addition, the boss supervision system enables remote monitoring and maintenance, ensuring a stable, efficient, and high-quality process.
Merenti Refrigerazione, a refrigeration specialist with long-standing experience in the sector and a CAREL partner for two generations, managed the design and installation of the system, ensuring optimal integration between the various technologies. Thanks to the remote monitoring system, Merenti can now oversee the curing rooms in real time and intervene promptly when needed, guaranteeing operational continuity and maximum efficiency.
